LEMON-BUTTERMILK SHAKE
1⁄2 cup cold whole or lowfat buttermilk
1 tablespoon honey
1 pint vanilla bean or original
vanilla ice cream, softened
1 pint lemon sorbet, softened

In a blender, combine the buttermilk and honey. Blend for 15 seconds. Add the ice cream and sorbet, then pulse several times to begin breaking them up. With the blender off, use a silicone spatula to mash the mixture onto the blades. Continue pulsing and stopping to mash until the mixture is thick, smooth and moves easily in the blender, about 1 minute.

DARK CHOCOLATE MILKSHAKE WITH “FLUFFY” COCONUT CREAM
1⁄4 cup plus 2 tablespoons heavy cream
3 tablespoons cream of coconut, such as Coco Lopez
2 tablespoons Marshmallow Fluff
1⁄3 cup whole milk
3 tablespoons chocolate syrup
1 3⁄4 cups premium chocolate ice cream
Toasted dried shredded sweetened coconut, for garnish (optional)

Combine heavy cream, cream of coconut and Marshmallow Fluff in medium bowl. Using a hand-held mixer, whip until stiff peaks form. Combine the milk and chocolate syrup in a blender and blend for 5 seconds. Add the ice cream and blend until smooth, about 10 seconds. Pour one-third of the milkshake into a 16-ounce glass and top with 1⁄4 cup of the coconut cream mixture. Repeat with another third of the milkshake and 1⁄4 cup coconut cream. Top with remaining milkshake. Top with remaining coconut cream and garnish with toasted coconut, if desired. Serve immediately.

MALTED CARAMEL SHAKE
1⁄2 cup cold whole or lowfat milk
1⁄4 teaspoon pure vanilla extract
1 tablespoon malted milk powder
8 scoops caramel, caramel swirl, or dulce de leche ice cream, softened

Place milk, vanilla extract and malted milk powder in a blender and blend to mix thoroughly, about 15 seconds. Add ice cream and pulse several times to break it up. With the blender motor off, use a flexible spatula to mash the mixture down onto the blender blades. Continue pulsing, stopping, and mashing until the mixture is well blended, thick, and moves easily in the blender jar, roughly 30 to 90 seconds. Pour into a chilled glass or glasses and serve at once.

TOASTED MARSHMALLOW MILKSHAKE
Nonstick cooking spray
9 large marshmallows
1⁄4 cup whole milk
1 3⁄4 cups premium vanilla ice cream
Toasted marshmallows, for garnish (optional)

Preheat the broiler. Line a rimmed baking sheet with parchment paper and spray with nonstick cooking spray. Arrange marshmallows flat on the baking sheet and place under the broiler until the tops are a deep golden brown color, about 40 seconds. Remove from oven, carefully turn marshmallows over, and broil until they are deep golden color. Remove from the oven and let cool slightly. Combine the marshmallows and milk in a blender and blend for 5 seconds. Add the ice cream and blend until smooth, about 10 seconds. Serve immediately.

MAPLE-BUTTER PECAN SHAKE
1⁄2 cup cold whole or lowfat milk
1⁄2 cup chopped toasted pecans
3 tablespoons pure maple syrup
1 qt softened butter pecan ice cream
just melty at the edges

Place the milk, pecans, and maple syrup in a blender and blend to break down the pecans and mix thoroughly, about 30 seconds. Add the ice cream and pulse several times to begin breaking it up. With the blender motor off, use a flexible spatula to mash the mixture down onto the blender blades. Continue pulsing, stopping, and mashing until the mixture is well blended, thick, and moves easily in the blender jar, roughly 30 to 90 seconds. Pour into a chilled glass or glasses, and serve at once.

MANGO, CHILI AND LIME SHAKE
1⁄4 cup cold whole or lowfat milk
1⁄4 cup lime juice
1⁄4 teaspoon chili powder or cayenne pepper, or to taste
Pinch salt
1 pint vanilla bean or original vanilla ice cream, softened
1 pint mango sorbet, softened

In a blender, combine all ingredients. Pulse several times to begin breaking up the ice cream and sorbet. With the blender off, use a silicone spatula to mash the mixture onto the blades. Continue pulsing and stopping to mash until the mixture is thick, smooth and moves easily in the blender, about 1 minute.
